Chiarentana Blend, our flagship oil
Characteristics of this variety
Chiarentana is the traditional Tuscan blend of four basic varieties of olives: Frantoio, Leccino, Moraiolo and Pendolino. However, because of the special conditions of this year’s season, Leccino and Frantoio are dominant, still leading to a powerful and flavour-rich oil.
Recommended combinations
Because of its variety of aromas, Chiarentana can be combined with all Tuscan recipes, ribollita (kale and bean soup), bistecca alla fiorentina (T-bone steak), pappa al Pomodoro (a Tuscan soup with bread and fresh tomatoes), panzanella (a bread, onion, cucumber and tomato salad), fagioli all’uccelletto (cannellini beans cooked with pork rind), all pasta dishes, grilled and roast meat, pecorino with pears, any kind of salad.

Characteristics of this variety
Frantoio oil has the intense fruity fragrance of freshly cut grass, its taste is elegant end recalls fresh olives and the light bitterness of an artichoke leaf, followed by a deep peppery sensation in the throat, which leaves behind a perfectly clean mouth.
Recommended combinations
Widely used in Tuscan cooking thanks to its elegance, this oil is able to enhance “harmonious” dishes such as spaghetti with tomato sauce, vegetables and bean soups, “Crostini”, “Fiorentina” steak (T-bone), row vegetables dips, white beans and boiled vegetables, as well as mixed salads.

Characteristics of this variety
Leccino oil has a vivid fruity aroma of fresh olives which have been picked and pressed at the right state of maturation, and is pleasantly harmonious in the mouth. The hints of thistle (bitter-sweet) and the deep peppery sensation in the throat leave your mouth perfectly cleansed.
Recommended combinations
Pairing of this oil with pasta recipes without fish or tomato sauces, with asparagus and fresh pecorino cheese, as well as with roast-beef, grilled white meat, fresh lettuce and chicory salads with olives and pine nuts, and with mashed potatoes, is highly recommended .
