Making pure varietal olive oil

Chiarentana has chosen to produce its oil not as a blend, but pure from different varieties of trees. This allows us to provide specific care to each one of the different phases involved in producing choice olive oil.

  • New olive groves have been planted with different varieties of trees selected for their fragrant oil, while existing traditional ones continue to be tilled and harvested

  • Different species of trees are harvested separately as their olives reach the ideal stage of maturity, thus bringing out the intensity of their individual flavours and fragrances

  • The olives are then pressed in the estate-run press using different techniques appropriate for each species, and the oil filtered immediately to avoid oxidation and maintain its freshness and wholesomess

The resulting oils are kept, bottled and sold separately, both to satisfy personal tastes and to accompany different recipes and special foods.

A blend of these oils is also available.
